I am assuming melty mild… whichever is cheaper

The younger mild would be much cheaper.

That pork and rab sandwich from Pittsburg uses freshly knife shaved older sharp provolone.

I have replicated it a few times and it is an awesome sandwich.

So much depends on sourcing freshly baked local bread.
