That pork and rab sandwich from Pittsburg uses freshly knife shaved older sharp provolone.

I have replicated it a few times and it is an awesome sandwich.

So much depends on sourcing freshly baked local bread.

I worked in Niagara Falls in the ‘70’s, and on Fridays, we would go to this place on Pine Ave called Peg’s.

Best steak and cheese I ever had, to this day, and it looked just like that.

In fact, when I saw the picture, I could almost taste it.
